Sweet, fragrant and floral with hints of citrus, ginger and mint that particularly complement seafood and pork.

  • Add to a little fish and soy sauce to make a delicious dip for prawns.  
  • Stir through a seafood satay.  
  • Shake into a gin cocktail – then use a lemongrass stalk as a stirrer.  
  • Brush over chicken before baking. 
  • Simmer in noodle soups. 
  • Mix into ground pork patties.  
  • Spread over white fish and wrap in banana leaves before barbecuing.   
  • Swirl through a Thai-style chicken & red pepper curry. 
  • Simmer mussels in an aromatic coconut, curry paste and lemon grass broth.

This delicious sandwich hails from Vietnam. In its use of baguettes and mayonnaise, it’s a legacy of the French colonial presence in the country. 

  1. Thinly slice pork tenderloin slices and steep for at least 2 hours in a marinade of 2 parts Lemongrass Paste, 6 parts soy, 6 parts brown sugar, 4 parts fish sauce and 1 part each of grated ginger and garlic). 


  2. Flash-fry the marinated slices and use to stuff baguettes, spread with a 50:50 blend of sriracha and mayonnaise. Top with quick pickled grated carrot, slices of cucumber, a dash of soy and fresh coriander leaves.
