The brisket is usually cooked whole on the BBQ or slow cooked for hours to create perfect pulled beef, alternatively this could be slowly braised for a tender stew. Produced from cattle sired by pedigree Aberdeen Angus bulls.
The Aberdeen Angus is a native British breed, whose meat is naturally marbled with fat, making it exceptionally tender and full of flavour. We hang the hindquarters on the bone to mature it, so it becomes even more flavoursome and tender.

Place brisket in an ovenproof dish, cover and place in oven until thoroughly cooked, the juices run clear and the meat is tender. (Time 4 1/2 - 5 hours Oven: 150°C, Fan: 130°C, Gas: Gas Mark gas 2)
