Oven instructions: For best results allow the turkey joint to sit at room temperature for 1 hour before cooking. Size and thickness may vary, cook times are given as guidance. Preheat the oven. Remove sleeve and film, then place joint in its tray onto a baking tray. Cover tray with foil and place in the centre of the preheated oven. ……During cooking: Cook for 1 hour 25 minutes. Remove foil, baste joint with juices from the bottom of the tray. Return to the oven and cook uncovered for a further 15 minutes. ……End of cooking: Remove from the oven. Pierce the thickest part of the breast meat with a skewer to check that there is no pink meat and the juices run clear. If more cooking is required return it to the oven, checking every 15 minutes. Once cooked, remove from the oven, cover the tray with foil and leave to rest for 15 - 20 minutes. Remove trussing bands and carve to serve. Do not reheat once cooled.
