A bone-in beef joint prepared by hand and matured using the traditional method of dry ageing. This technique results in beef that is deeper in colour, with a distinct aroma, smooth texture and a rich, buttery flavour.

Produced from cattle sired by registered pedigree native breed bulls. Waitrose Native Breed beef comes from cattle breeds that are indigenous to the British Isles, specially selected for excellent marbling quality.
