Preparation and Usage
Preparation Time:
25 minutes (plus resting time) Makes 1 × 2lb loaf
You will need:
500g (packet) wholemeal bread mix
20g butter
340ml water, at room temperature
Strong white bread flour for kneading
To hand make
1. Place the bread mix in a mixing bowl and rub in the butter until the mixture resembles breadcrumbs.
2. Gradually add the water using a round bladed knife to combine until a dough is formed.
3. Tip the dough onto a floured worktop (or place in a food mixer fitted with a dough hook) and knead for about 10 minutes until the dough is smooth and elastic.
4. Place the dough back in the mixing bowl, cover with lightly oiled cling film and leave to rest in a warm place for 1 hour.
5. Remove the dough from the bowl and knead the dough again for a further 5 minutes. Divide the dough into three. Roll each piece into a length approx. 30cm long. Place the three pieces side by side and plait together. Tuck under the top and bottom to neaten the loaf.
6. Place the plaited loaf on a greased baking tray. Cover with oiled cling film and leave to rest in a warm place for 30 minutes.
Preheat the oven to 230°C / Fan 210°C / Gas Mark 8
7. Uncover and bake in the oven for about 25-30 minutes until well risen and lightly golden. Cool on
the baking tray for 5 minutes before placing on a wire cooling rack.
