This highball cocktail can trace its origins to a medicinal drink on the island of Cuba.

2 tsp granulated sugar
½ fresh lime, squeezed
1 pack/s fresh mint
50ml white rum
crushed ice
soda water

Put the sugar in a highball glass. Add the lime, 2 sprigs of fresh mint and muddle these together.
Add the white rum and then fill the glass with crushed ice, top with soda water and garnish with more mint.
