1 cucumber
50ml Seedlip Grove 42
30ml Robinsons Crushed Lime & Mint Cordial
10ml fresh lime juice, plus wedges to serve
4 fresh mint leaves, plus a sprig to serve
50ml sparkling water
1. To make cucumber ribbons, cut a cucumber in half lengthways, then use a vegetable peeler to cut a couple of long ribbons. Carefully arrange these ribbons inside a tall glass – they should cling to the sides.
2. Fill the glass with crushed ice, then add the Seedlip, cordial, lime juice and mint leaves and stir to combine. Top with sparkling water and mix a little more. Add a mint sprig and serve with the lime wedges.
