Orange, chicory & goat's cheese salad

The sweetness of the oranges, slightly bitter chicory leaves and salty goat’s cheese make a perfect flavour combination in this winter salad.
Serves: 6
5 Waitrose Large Oranges
2 tbsp extra virgin olive oil
½ tsp ground cinnamon
1 tsp wholegrain mustard
250g pack chicory, leaves separated
260g soft goat’s cheese, trimmed and cut into small pieces
25g hazelnuts, toasted and roughly chopped
½ x 25g pack fresh mint, chopped
1 Grate the zest and squeeze the juice from one of the oranges. Whisk together with the oil, cinnamon and mustard to make a dressing.
2 Cut away all the skin and pith from the remaining oranges and slice each one horizontally into rounds.
3 Arrange the chicory leaves, orange slices and goat’s cheese on
a platter, and drizzle over the dressing. Scatter with the hazelnuts and mint, and serve with crusty bread.

Use a mixture of green and red chicory leaves to make
a really colourful salad.
