Plum and feta salad

Mint and salty feta take the plums’ honeyed sweetness in a savoury direction. This is great as a salad, but just as good piled onto toast as an autumnal bruschetta.
Serves: 4
4 tsp clear honey, plus extra to serve
4 tsp cider vinegar
4 tbsp extra virgin olive oil, plus extra to serve
2 tbsp finely chopped red onion
8 ripe plums, stoned and roughly sliced
handful mint leaves
100g bag watercress
200g pack feta
1. In a small bowl, mix the honey and cider vinegar; season and whisk in the oil to make a dressing. Stir in the red onion and set aside.
2. Put the plums, mint and watercress in a large mixing bowl, then toss through the dressing. Divide the salad between 4 plates, then roughly break the feta over the top. Splash the plates with a little more oil, followed by an extra drizzle of honey.
