The perfect jacket potato

• 1 extra large potato, washed (about 250g)
• 1 tbsp olive oil
• 1 tsp flaky sea salt
1 Preheat oven to 190oC, gas mark 5. Use a fork to prick the potato a few times, then coat with the oil and salt. Put on a rack (the oven shelf works well) set over a baking tray. Bake for 50 minutes.
2. Turn the oven up to 220oC, gas mark 7, and cook for a final 15 minutes. Remove the crispy jacket potato from the oven and immediately cut open to release any steam and prevent your jacket from going soggy. Serve with your favourite toppings, or try one of our delicious suggestions overleaf.
