Silvana makes this simple lunchtime favourite for the family

These are like mini pizzas and really easy to make. The acid in the yogurt helps to soften the gluten in the flour so you get a lovely pliable dough that will puff up slightly when you cook it. 

It’s coming towards the end of summer so I’m doing these on the barbecue but you could just as easily pop the tomatoes and the flatbreads under the grill. I’ve used one of my favourite ingredients, the balsamic glaze, to give the tomatoes a lovely sweet tang. For added flavour, drizzle some fiery zhoug or ruby rose harissa over the finished flatbreads.
