Baharat chicken skewers
These zingy kebabs will spice up midweek mealtimes. Toss bite-sized pieces of chicken thigh fillet with chilli oil, baharat seasoning and lemon zest, then thread onto metal skewers. Cover and marinate in the fridge for an hour if you have time. Griddle or grill the chicken until fragrant and golden, cooked through with no pink meat and the juices run clear. As it cooks, steep sliced red onion with lemon juice until vibrantly pink, then combine with olive oil, a little sumac and chopped parsley. Serve the chicken and salad on top of warmed flatbreads, drizzled with a little more olive oil.
TIPS, TRICKS & HACKS
- Mix baharat seasoning with olive oil, garlic, and orange zest and juice, and use to marinate a joint of slow-cooked lamb shoulder.
- Make a dip for flatbread. Whizz up chickpeas or butter beans with tahini, lemon juice, garlic and baharat seasoning.
- Mix with oil, then brush over bream or sea bass fillets before roasting. Stir a little through a parsley-laden tabbouleh to enjoy alongside.
- Stir through melted butter, along with coarsely chopped mint, then drizzle over griddled flatbreads.
- For a stylish snack, sprinkle over a tray of mixed nuts before roasting.
- Use in a spicy dish of minced lamb to top a Levantine flatbread.
- Sprinkle over halves of aubergine, then roast and mash for a spicy baba ganoush.
- Make a fragrant pilaf-style rice. Sizzle baharat seasoning into a pan of softened onions and garlic before adding rice and stock.
