Chicken Seasoning

Did you know

Despite its name, you don’t have to reserve Chicken Seasoning for exclusive use with poultry. Its beautiful blend of flavours will enhance a traybake of roasted veg, for instance. Use it to season fennel and onion wedges, and chunks of pepper and squash, then toss in olive oil and lemon juice before roasting.

what does it taste like?

There’s savoury depth from onion and garlic, zing from lemon zest, fragrant freshness from parsley and tarragon and earthiness from paprika, balanced by the sweetness of red pepper and demerara sugar.

TIPS, TRICKS & HACKS

  • Mix with butter, then rub all over a whole chicken, as well as stuffing between the breast and the skin. Basting regularly, this will yield a beautifully seasoned bird with moist meat and crisp skin.
  • Flavour chicken legs with a dry rub of Chicken Seasoning before roasting with potato wedges and meaty strips of red pepper to serve alongside a green salad.
  • Add to oil and brush over chicken thighs before and during barbecuing.
  • Season strips of chicken fillet before dipping in flour, egg and breadcrumbs for goujons to serve with potato wedges and peas.
  • Mix with lemon juice and oil to use as a marinade for chunks of chicken breast, then thread onto skewers with red onion and green pepper and grill. Serve with flatbread, yogurt and salad.

easy meal idea

Chicken burgers

A judicious sprinkling of Chicken Seasoning accentuates the flavours of this family favourite.

  1. Place a couple of chicken breasts between 2 layers of parchment or clingfilm. Using a heavy frying pan, bash to a uniform thickness of around 2cm. Cut each in half (to yield 4 burgers), then season each well on both sides with Chicken Seasoning.

  2. Put a griddle pan on a high heat. Cook the chicken for around 3 minutes on each side, until charred on the outside and cooked within. Remove from the pan, stand for a few minutes, then serve in burger buns, topped with whatever you fancy (sliced tomatoes, coleslaw, lettuce, mayo, onion rings, gherkins etc).
