WHAT DOES IT TASTE LIKE?

It harnesses the keynote flavours of pimento (aka allspice), cumin, bay leaf and thyme, along with garlic, onion, black pepper, paprika and a touch of turmeric, and backs it up with a punch of chilli.

Jerk-style halloumi with a honey-lime glaze

Toss thickly-sliced halloumi with jerk style seasoning, a dash of light soy sauce, some crushed garlic and a little lime zest and juice; gently coat the cheese. Get a griddle hot, then sizzle the halloumi until golden and charred in places. Mix honey with more lime juice to make a glaze, brush it over the cheese, then serve with more lime wedges and your choice of salad, slaw or chips.

TIPS, TRICKS & HACKS

  • Use it as a dry rub or in a marinade to bring Caribbean-style flavour to chicken thighs or drumsticks, steaks, pork chops or tofu.
  • It’s also great with fish. Mix with a little oil, then brush onto meaty fish fillets such as monkfish or salmon before grilling.
  • Add a couple of teaspoons when frying the onion base of a pot of coconutty Jamaican-style rice and peas.
  • Use to bring a Jamaican-style flavour to a vegetable traybake of butternut squash, cauliflower, green pepper, okra and spring onions.
  • Add a spoonful to a salsa of chopped red chilli, mango, pepper, spring onion, coriander and sweetcorn.
