what does it taste like?

A blend of breadcrumbs with sundried tomato flakes, garlic, oregano, chilli flakes and a touch of bright orange peel.

TIPS, TRICKS & HACKS

  • Add to homemade burgers and meatballs. 
  • Finish pasta bakes with a crunchy topping. Great on macaroni cheese or veggie lasagne!
  • Pat onto fish fillets and chicken breasts before baking. 
  • Make Mediterranean-style breaded cutlets. Dredge chicken or pork in flour, dip in beaten egg, then coat with a crust before frying.  
  • Sprinkle over finished pasta dishes, as a rustic pangrattato-style topping. 
  • Use to top herby rice-stuffed peppers and beef tomatoes for baking.

EASY MEAL IDEA

Crusted baked aubergine halves

This makes a simple, meat-free lunch, full of Mediterranean flavours.

  1. Cut a couple of aubergines in half lengthways and score a zig-zag lattice pattern into the flesh of each. Drizzle each of the halves with extra-virgin olive oil, then scatter over a topping of Mediterranean Crust. 

  2. Roast in a 200ºC/gas 6 oven for 35-40 minutes, or until the aubergine’s flesh is soft and the crust is browned (you might have to loosely cover the aubergines with foil after 20 minutes, if the top is browning too quickly). Serve with lemon wedges, tzatziki and flatbreads.
