- Use to make perhaps the world’s best roast potatoes.
- Marinate cubes of feta, then add them to salads or spread onto black pepper crackers.
- Drizzle over chunks of leftover bread, then bake in the oven for herby croutons.
- Make a dip for crusty bread with a splash of balsamic vinegar.
- Drizzle over focaccia before baking – and afterwards too.
- Add nutty, herby flavour to vinaigrettes.
- Use to soften a soffritto for a flavourful ragu.
- Oil the pan before sizzling cuts of meat.
EASY MEAL IDEA
Herby roast Provençal vegetables
This simple traybake takes the Provençal flavour notes from the oil and adds appropriate vegetables for a loose, deconstructed take on ratatouille. Add lamb chops if you wish.
- Add coarsely diced aubergine and courgette in a baking dish, along with strips of red and green pepper, wedges of red onion, some halved tomatoes and a few peeled but whole garlic cloves. Add some thyme sprigs, a few bay leaves and drizzle with plenty of Rapeseed Rosemary, Garlic & Thyme Oil.
- Bake in a hot oven for 30 minutes, or until the vegetables are soft and beginning to char around the edges. Spritz over a little wine vinegar and serve with plenty of crusty bread to mop up the juices.
