Waitrose Sage A Mediterranean herb with soft, velvety green leaves. Sage is a very strong, aromatic and slightly bitter herb. Best partnered with fatty foods, as it aids digestion, it is well suited to Pork, Goose and Poultry.. Being a robust herb, Sage does not loose flavour during long periods of cooking. A classic but all-time favourite is sage and onion stuffing. For a fresh twist to this classic, add plenty of fresh lemon zest and use brioche crumbs instead of bread to give a lovely light stuffing. Chop leaves and make pesto using fresh sage, as an alternative to basil and walnuts, instead of pine nuts. Whizz up in a food processor with parmesan and olive oil.
