Inspired by the classic cocktail, our Old Fashioned Glazed Ham is a real Christmas centrepiece. This boneless ham is butchered from the leg, hand scored, and dry-cured with demerara sugar in a 'sugar pit' style borrowed from the American barbecue tradition. A candied orange slice and smoke flavoured cherries complement its delicious succulence and sweetness. It's served with a deeply flavoursome whisky and orange flavoured glaze to brush on at home before serving. A rosemary sprig adds the final flourish.
