Mountain Comté AOP cheese made from raw cow's milk.
Raw cows milk. Franche-Comté, France. Creamy with hints of fruit, hazelnut and toffee, made by small diaries and matured by affineurs, experts in ageing cheese. Strength 5"………Hints of fruit, hazelnut and toffee, matured in an old former fort in the Jura mountains Strength 5 Made from raw cow's milk. An iconic French alpine cheese. Affineur Marcel Petite selects Comté from small cheese makers, and ripens it for Waitrose. In 1996, they discovered Fort de Saint Antoine, a disused fort in the Jura mountains, which happened to have a constant microclimate that was perfect for slowly ripening cheese.
