Oven cook (From Chilled)
Preheat oven. Remove butter and place to one side. Place the joint in a greaseproof paper-lined roasting tray, drizzle with 1 tsp of oil and cook in the centre of the oven for the time stated. Add butter to the top of joint during the last 10 minutes of cooking. Due to the natural variability in the thickness of the meat, the cooking instructions provided are a base guide. For thicker joints, additional cooking time may be required. Once cooked, allow to rest for 10 minutes before serving. Remove strings before carving. Do not reheat once cooled. (Time Rare 25-30 mins Medium 35-40 mins Well Done 45 mins+, Oven: 200°C, Fan: 180°C, Gas: Gas Mark 6)
