Wild keta salmon filletsWild salmon is very low in fat due to a life of swimming free, so please take extra care not to overcook it. Because keta salmon have a rich diet of wild fish and crustaceans, the size, colour and texture can vary, and you'll notice a rich, shellfish-like aroma when you first open the pack and a mild flavour once cooked. These are all hallmarks of wild salmon. To maximise use of every part of the whole fillet, fillets are cut into visually similar portions ensuring every pack displays 2 portions of wild salmon that look the same on the plate when served. For this reason, rectangular fillets and triangular tail fillets are packed in pairs.
