Preparation: Use separate kitchen utensils and surfaces for raw meat and cooked, or wash between uses. Wash hands after handling raw meat. Unwrap and dispose of packaging carefully. All cooking appliances vary. This is a guide only.
Gas 7, 220°C, Fan 200°C, 30 mins per 500g + 30 mins
Preheat oven. Remove all packaging. Rub the rind dry with kitchen roll and add oil and salt, working into the cuts. Once the oven is pre-heated, rub the salt off the rind and place in a roasting tray in the centre of the oven. Cook for 30 minutes. Reduce the temperature to 180°C/Fan 160°C/Gas 4 for the remaining cooking time. If the crackling is still a bit soft, turn the temperature back up to 220°C/Fan 200°C/Gas 7 for the last 15 minutes. Ensure product is thoroughly cooked, that juices run clear and that no pink colour remains. Allow to rest for 20 minutes before carving. Do not reheat once cooled.
