This veg-rich, one-pot wonder uses the air fryer to brown sausages evenly and quickly. A light drizzling of oil and plant-based sausages keep fat levels to a minimum, too.

Turn the air fryer to 180ºC and insert the grate in the cooking bowl. Toss the onions, sweet potato and squash with the oil in a bowl. Season, tip into the air fryer and cook for 5 minutes. Stir the vegetables and cook for a further 5 minutes, stirring again halfway through. Meanwhile, put a little water in the kettle on to boil.
Combine the shawarma paste with 1 tbsp just-boiled water in a small bowl. Add the sausages to the air fryer, pour over the shawarma mixture and add the thyme leaves. Carefully stir to mix through and continue to cook for a further 15 minutes, stirring halfway. The sausages and vegetables should be golden brown and tender by this point. If they don’t look caramelised, cook for a further 5 minutes. Serve the sausage mixture with the lettuce leaves, tzatziki and warmed flatbreads.
