Air fryer shawarma-spiced squash & veggie sausage bake

This veg-rich, one-pot wonder uses the air fryer to brown sausages evenly and quickly. A light drizzling of oil and plant-based sausages keep fat levels to a minimum, too.

Ingredients

  • 3 small red onions, each cut into 6 wedges
  • 350g Cooks' Ingredients Sweet Potato & Butternut Squash
  • 1 tbsp Essential Olive Oil
  • tbsp Cooks’ Ingredients Shawarma Paste
  • 230g pack This Isn't Pork Sausages
  • 1 tbsp lemon thyme or thyme leaves
  • 1 small handful round lettuce leaves
  • 4 tbsp Tzatziki
  • 3 Greek style flatbreads, warmed

Method

  1. Turn the air fryer to 180ºC and insert the grate in the cooking bowl. Toss the onions, sweet potato and squash with the oil in a bowl. Season, tip into the air fryer and cook for 5 minutes. Stir the vegetables and cook for a further 5 minutes, stirring again halfway through. Meanwhile, put a little water in the kettle on to boil.

  2. Combine the shawarma paste with 1 tbsp just-boiled water in a small bowl. Add the sausages to the air fryer, pour over the shawarma mixture and add the thyme leaves. Carefully stir to mix through and continue to cook for a further 15 minutes, stirring halfway. The sausages and vegetables should be golden brown and tender by this point. If they don’t look caramelised, cook for a further 5 minutes. Serve the sausage mixture with the lettuce leaves, tzatziki and warmed flatbreads.
