Ingredients

  • 60g hulled and sliced strawberries, plus one whole strawberry for garnish
  • 25ml grenadine
  • 50ml Sipsmith London Dry Gin
  • 120ml chilled sparkling water
  • 1 scoop No.1 Madagascan Vanilla Ice Cream
  • 1 sprig/s thyme

Method

  1. Chill a highball glass in the freezer while you make the cocktail. In a mixing glass, muddle the sliced strawberries with grenadine until combined. Add gin and stir.

  2. Pour into the chilled glass, top up with chilled sparkling water, then carefully add the ice cream on top. Garnish with a whole strawberry and a sprig of thyme.
