What makes a good egg? One laid by a happy hen. All Waitrose eggs come from free range hens, who have lots of room to roam in grassy paddocks. Our welfare standards mean we’ve held Compassion in World Farming’s Good Egg award since 2008 – and we think you can taste that care when you eat our eggs. BEHAVING AS HENS SHOULD
All our shelled eggs are supplied by British farms where hens can roam freely, shelter under trees and behave naturally. None of our eggs are from caged or barn systems. The hens can access food and fresh water in their purpose-built hen houses, and they lay their eggs in quiet, comfortable nest boxes.
FARMERS WHO CARE
We know and trust all our egg farmers. And we know that they care just as much as we do about maintaining the highest animal welfare standards, protecting the environment and farming sustainably.
Eggs have to be one of the most versatile ingredients of all – they can be poached, fried, boiled, baked, or whisked into a cake or meringue. Here are a few of our favourite egg recipes.
AVOCADO AND POACHED EGG ON TOAST
Beautifully fresh eggs are perfect simply poached and served on toast with creamy avocado, brightened with lime and chilli
1. Crack your egg onto a saucer, so it’s easier to slide into the pan.
2. Add a small splash of vinegar to a pan of cold water, around 5cm deep, and bring to a gentle simmer.
3. Use a spoon to swirl the water, making a whirlpool, and gently slide your egg into the centre. Make sure the heat isn’t too fierce – there should just be small bubbles rising.
4. Cook for 3-4 minutes, until the white is just set then gently lift out with a slotted spoon and drain on kitchen paper.
KIMCHI EGG-FRIED RICE
For a twist on tradition, top flavour-packed fried rice with a crispy fried egg, and mix in when eating. This super-speedy dinner is ready in under half an hour
Use egg whites to make this show-stopping dessert. Sweet strawberries, nutty meringue and vanilla cream are the ultimate combination, but you can use other fruits if you like
