Ham & sweet potato jackets

2 large sweet potatoes
½ bunch salad onions, sliced
75g frozen sweetcorn, defrosted
1 tbsp reduced fat mayonnaise
90g pack Cooks’ Ingredients Smoked Ham Batons
1. Preheat the oven to 200°C, gas mark 6. Prick the potatoes with a fork and microwave for 5 minutes on high then transfer to the oven and bake for 20-25 minutes or until tender.
2. Meanwhile, mix together the salad onions, sweetcorn, ricotta, mayonnaise and ham then season.
3. Halve the sweet potatoes and spoon the filling on top to serve.
