Ingredients
2 large sweet potatoes
½ bunch salad onions, sliced
75g frozen sweetcorn, defrosted
100g ricotta
1 tbsp reduced fat mayonnaise
90g Cooks' Ingredients Smoked Ham Batons
Method
Preheat the oven to 200°C, gas mark 6. Prick the potatoes with a fork and microwave for 5 minutes on high then transfer to the oven and bake for 20-25 minutes or until tender.
Meanwhile, mix together the salad onions, sweetcorn, ricotta, mayonnaise and ham then season.
Halve the sweet potatoes and spoon the filling on top to serve.
