    Pan-Fried Gammon with Caramelised Pineapple

    Pan-Fried Gammon with Caramelised Pineapple

    This is a modern twist on an old favourite. Gammon and pineapple is seen as rather dated, but the saltiness of the meat with the sweet fruit is a classic combination.

    • Cooking time: 15 minutes
    • Total time: 20 minutes 20 minutes

    Serves: 4

    Ingredients

    • 1 tbsp olive oil
    • 25g butter
    • 2 queen pineapples, peeled and each cut into 8 wedges
    • 4 smoked gammon steaks, rind removed
    • 1 tsp caster sugar
    • 2 tsp wholegrain mustard
    • Grated zest and juice of 1 orange
    • salt
    • freshly ground black pepper

    Method

    1. Heat the oil and butter in a large frying pan, then add the pineapple and gammon (you may need to do this in batches). Cook over a high heat for 1 minute, then sprinkle the sugar over the pineapple. Cook for a further minute, then turn the pineapple and gammon steaks.
    2. Cook for a further 2-3 minutes, or until the gammon is cooked and the pineapple is golden and caramelised. Remove from the pan and arrange on warmed serving plates.
    3. Stir the mustard and orange juice and zest into the pan, season and bubble for a few seconds. Spoon the mixture over the gammon and pineapple. Serve at once with creamy mashed potato.
