Gammon with papaya salsa

Give a tropical twist to classic gammon steaks with this speedy weeknight supper. Add a finely chopped red or green chilli to the salsa for a burst of heat.

Ingredients

  • 200g Waitrose Papaya (about ½), peeled, deseeded and cut into 1cm cubes
  • 1 unwaxed lime, zest and juice
  • ¼ red onion, finely chopped
  • 360g pack 2 British Unsmoked Gammon Steaks
  • ½ tbsp olive oil
  • 250g pouch Waitrose Coconut, Lime & Coriander Rice (optional)
  • ½ x 300g pack fine green beans, trimmed (optional)
  • ¼ x 25g pack coriander, leaves roughly chopped

Method

  1. For the salsa, put the papaya, lime zest and juice and red onion in a bowl with a pinch of salt; mix together, then set aside.

  2. Heat a large griddle or frying pan over a high heat. Brush the gammon steaks all over with the oil, season with black pepper, then griddle or fry for 3-3½ minutes on each side

  3. Meanwhile, if using, heat the rice according to pack instructions. Simmer the beans in a saucepan of boiling water for 3-4 minutes, if using, then drain. Toss the coriander through the salsa and serve with the gammon steaks, beans and rice, if liked

This tropical fruit contains beneficial vitamin C and other antioxidants, and is delicious eaten just as it is with a little lime squeezed over. Alternatively, blend it into smoothies or add to salads.
