Harissa chicken & quinoa stir fry

100g Waitrose Love Life Quick Cook Freekeh
350g pack essential Waitrose British Chicken Mini Breast Fillets
2 tsp harissa paste
1 tbsp oil
1 red pepper, sliced
100g cherry tomatoes, halved
½ x 28g pack fresh coriander, chopped
1. Cook the freekeh and quinoa in boiling water for 12 minutes until tender, drain.
2. Meanwhile, mix the chicken and harissa together to evenly coat.
3. Heat the oil in a frying pan and fry the chicken and pepper for 4-5 minutes, add the tomatoes and grains and cook until the chicken is cooked through with no pink meat. Stir in the coriander, season and serve.
