Smoked Mackerel Noodles with Cucumber and Coriander

Ingredients

2 x 150g sachets amoy straght to wok noodles

2 tbsp soy sause

1 tsp grated fresh ginger

1 finely chopped clove garlic

1 tbsp cold water

ΒΌ finely sliced cucumber

1 bunch finely chopped salad onions

20g pack roughly chopped fresh coriander
-
2 smoked peppered mackerel fillets
Method

Place 2 x 150g sachets Amoy Straight to Wok Noodles in a large bowl and cover with boiling water. Leave for 5 minutes. Meanwhile, mix together 2 tbsp soy sauce, 1 tsp grated fresh ginger, 1 finely chopped clove garlic and 1 tbsp cold water to make a dressing. Drain the noodles and rinse under cold water, then return to the bowl. Toss with ¼ finely sliced cucumber, 1 bunch finely chopped salad onions and a 20g pack roughly chopped fresh coriander. Pour over half the dressing. Skin and break up a pack of hot smoked peppered mackerel fillets into pieces. Serve the noodles topped with the mackerel and pour over the remaining dressing.
