Spiced apple, pear & chilli chutney
Fruity chutneys are so easy to make. In this recipe pears and apples couple well with cider vinegar and you could try ground cinnamon instead of the ginger

Ingredients
- 3 essential Waitrose Royal Gala Apples, cored and coarsely grated
- 3 essential Waitrose Conference Pears, peeled, cored and diced
- 1 green chilli (from a pack of Cooks’ Ingredients Mixed Chillies), finely chopped
- 1 large onion, chopped
- 1 tsp mustard seeds
- 6 cm piece root ginger, peeled and finely chopped
- 100g sultanas
- ½ tsp sea salt
- 250g dark brown muscovado sugar
- 350ml Aspall Organic Cyder Vinegar
Method
Place all the ingredients in a large saucepan, cover and cook over a high heat for 10 minutes until all the sugar has dissolved.
Turn down the heat and cook for 20 minutes. Remove the lid and cook for a further 15-20 minutes until the fruit has softened and most of the liquid has evaporated and become syrupy.
Allow to cool before spooning into sterilised jars. Seal and leave for at least a week before eating. Can be stored in a cool, dry place for up to 3 months.
