Spicy veggie cottage pie

1 tbsp oil
1 small onion, chopped
1 small carrot, diced
250g ‘Meet The Alternative’ Frozen Beef-Style Mince made with soya
180g jar Napolina Arrabbiata Stir-Through Pasta Sauce
400g pack essential Waitrose Mashed Potato
1. Heat the oil in a large saucepan and fry the chopped onion and carrot for 3-4 minutes. Add the frozen mince and cook for 1-2 minutes. Stir in the jarred Arrabbiata sauce and add 150ml water, cover and simmer gently for 10 minutes, stirring occasionally. Divide between 2 pie dishes.
2. Heat the mash according to pack instructions and spread over the mince.
3. Place under a preheated grill for 2-3 minutes until golden and crispy.
