Nathan Outlaw is a master of seafood. Here, he shares an early spring feast from British waters, bursting with fresh flavours
Famous for the award-winning restaurant, Nathan Outlaw in Port Isaac, he also owns Outlaw's Fish Kitchen in the Cornish fishing village and Siren at The Goring hotel in London. In the March edition of Waitrose Food, he wrote: 'I've made it my mission to encourage people to cook and eat more seafood; it's good for you and it's the original convenience food too, most of it taking just a few minutes to cook. The recipes give you an opportunity to try somethinig new and interesting, but you can do a lot of it in advance'
“It amazes me that, although we are surrounded by some of the best fish in the world, we Brits cook so little of it at home. If you’re worried about the smell lingering after cooking, just wash chopping boards and utensils in cold water before hot, and make sure that any scraps are immediately wrapped and deposited in an outdoor bin. Easy!”
