Chicken tikka
Add these gnarly spiced nuggets into a red curry sauce for chicken tikka masala, fold them into Greek yogurt for a deli-style bap filling, or serve as part of an Indian spread with breads, dips and samosas.
- Mix 4 tbsp Greek yogurt, the juice of 1 lemon juice, 1 tsp grated ginger, 1 tsp crushed garlic, ½ tbsp garam masala and 1 tbsp Deggi Mirch. Season, add chunks from 3 or 4 chicken breasts (or equivalent in thigh fillets) and marinate for at least 1 hour.
- Set your oven’s grill to high. Thread the chicken pieces onto skewers, place on a baking tray and grill, turning regularly, until cooked within (with no pink meat) and charred without – about 12 minutes.
