Mushroom & truffle oil tagliatelle
This simple pasta is elevated to savoury heaven through a judicious sprinkling of Truffle Oil.
- Cook tagliatelle in a pan of boiling salted water, as per the pack instructions. Drain (reserving some of the starchy cooking water), toss with a little Truffle Oil, return to the pan, cover and set aside.
- Meanwhile, add a little butter and olive oil to a frying pan on a medium heat, along with chopped mushrooms and sliced garlic and cook, stirring, until softened. Add some crème fraîche and stir through. Tip the sauce into the pasta, add a handful of parmesan and some of the pasta’s cooking water to create a loose, glossy sauce that clings to the pasta. Stir through chopped parsley, sprinkle over truffle oil and serve.
