Made with milk from cows grazed on mountain pastures, it's matured for considerably longer than standard Comté, spending a minimum of 24 months in the Fort des Rousses, an underground fortress from the Napoleonic era. The fort is known as the 'cathedral of flavours', because the natural movement of air and stable temperature inside provide perfect conditions for ripening cheese and bringing out deep, complex layers of flavour. The result is a superb Comté, deliciously creamy with toasty hints of fruit and nuts. Strength 6. Made with raw cow's milk.
