A Dry Cured Pork Sausage Seasoned with Paprika and Garlic
Using only four ingredients and time, this chorizo is lightly smoked over local oak. Great to cook for a subtle smoke flavour, or eat on its own! Chorizo de León is from the Castilla y León region in North West Spain, where they believe in taking more time in the curing, so they don't need to add preservatives. The region is famous for its food production and wine. In time honoured ways, they use the local oak to smoke the ring to give it a light smoky flavour. This versatile chorizo can be added to a tapas dish, infused with your chicken, or simply eaten on its own.
