St. Henri Shiraz is rich and plush when young, gaining soft, earthy, mocha-like characters as it ages. Fruit is nurtured through fermentation before maturation in old large wooden vats for 12 months, which allow the plum red wine to develop. Although a small proportion of Cabernet is sometimes used to improve structure, the focal point for St Henri remains Shiraz. This is a wine of enduring quality and cellaring potential. The subtle fruits of St. Henri makes it a remarkably food friendly wine, pairing well with red meat as well as poultry, but also suiting semi-hard cheese. For optimum enjoyment carefully decant prior to serving.
