Remove from the fridge 60 mins before cooking. ……Preheat oven. Remove all packaging. Place in a roasting tray, season the rind generously with sea salt and place in the centre of oven. Rotate the baking tray 180 degrees halfway through cooking. Leave to rest for 10 minutes before carving. (Time 50 mins, Oven: 240°C, Fan: 220°C, Gas: Gas Mark 9)
