Ingredients

  • 50g butter, melted, plus extra for greasing
  • 100g self-raising flour
  • 2 tbsp cocoa powder, plus extra for dusting
  • 125g golden caster sugar
  • 1 medium egg
  • 4 tbsp semi skimmed milk
  • 1 Waitrose Perfectly Ripe Williams Pear, peeled, cored and diced
  • 50g soft dark brown sugar

Method

  1. Preheat the oven to 180ºC, gas mark 4. Grease 4 x 200ml ovenproof ramekins or dishes with butter and place them on a baking tray. Sift the flour and half the cocoa into a large bowl. Add the caster sugar and mix.

  2. Whisk the cooled melted butter, egg and milk together in a small bowl. Pour over the flour mixture and whisk together well. Fold in the diced pear and spoon the mixture evenly between the prepared dishes.

  3. In a separate bowl, mix the remaining cocoa and the brown sugar together. Sprinkle this over the mixture in each dish. Spoon 2 tbsps of boiling water evenly over each pudding.

  4. Carefully place the tray in the oven and cook for 20–22 minutes, or until a skewer inserted halfway into the puddings comes out clean. Dust with more cocoa powder to serve. Great with crème fraîche or ice cream.
