  • 75g blanched hazelnuts
  • 225g Tate & Lyle Golden Caster Sugar
  • 6 egg whites
  • 1 tbsp instant coffee granules, dissolved in 1 tsp boiling water
  • 25g light brown muscovado sugar
  • 1 tbsp cocoa powder

FOR THE FILLING

  • 150g dark chocolate (70% cocoa solids), chopped
  • 4 egg yolks
  • 75g Tate & Lyle Golden Caster Sugar
  • 1 tsp instant coffee granules, dissolved in 1 tbsp boiling water (or 1 tsbp coffee liquer, such as Tia Maria)
  • 600ml double cream
