Ingredients

  • 4 tbsp sunflower oil
  • 1 tsp cumin seeds
  • 2 onions, thinly sliced
  • 2 tomatoes, thinly sliced
  • 4 clove/s cloves garlic, finely chopped
  • 1 tsp salt
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp Cooks’ Ingredients Chaat Masala
  • 2 peppers (1 red and 1 green looks good), deseeded and thinly sliced
  • 2 tbsp tomato ketchup
  • 1 tsp Cooks’ Ingredients Chilli & Garlic Sauce
  • 226g pack paneer, cut into thin fingers
  • ¼ x 25g pack coriander leaves, roughly chopped

Method

  1. Heat the sunflower oil in a large frying pan, then add the cumin seeds. Once they start to sizzle, add the onions and stir fry over a medium heat for 6-8 minutes until softened.

  2. Add the tomatoes to the pan and stir fry for 6-8 minutes until softened. Add the garlic, salt and spices, cook for 1 minute more, then add the peppers and 2 tbsp water and cook for another 5 minutes until they start to soften.

  3. Add the ketchup and chilli and garlic sauce into the vegetables and mix well, then add the paneer and mix again. Cook for 2 minutes until the paneer is hot through, then sprinkle over some coriander and serve.
