Ingredients

  • 210g pack bright & colourful stir fry
  • 150g pack king prawns in coriander & chilli
  • 220g jar Gymkhana Peanut & Sesame Chutney
  • 300g pack pilau rice

Method

  1. Snip or cut the stir fry veg into smaller pieces (reserve the coriander leaves), then stir fry according to pack instructions.

  2. Transfer to a plate and set aside. Sizzle the prawns for 2 minutes, stirring often, then add 3 tbsp peanut and sesame chutney, and the rice. Stir fry until the rice is piping hot, adding about 2 tbsp water to loosen it a little.

  3. Fold in the vegetables, check the seasoning, divide between plates, then tear the coriander over the top to serve.

  4. Add a pinch of dried chilli flakes if you like extra spice, and a small dollop of the chutney on the side.
