A light, bright twist on the Spanish holiday favourite.

3 white peaches
1 bottle Beronia Rueda Verdejo, Spain
100ml De Kuyper Peach Liqueur
2 tbsp caster sugar
1 sliced lemon
Ice
225ml bottle ginger beer
2 mint sprigs

Cut peaches into thin wedges. Put in a jug and add the wine, peach liqueur, caster sugar and sliced lemon. Stir and chill for a few hours if you can.
To serve, add ice, top up with a ginger beer, then garnish with mint sprigs.
