MEAL MATHS – TOMATO BAKED LAMB KLEFTIKO

WITH FETA & PITTA CRUST

Ready in 40 minutes | Serves 4

SCROLL DOWN TO ADD INGREDIENTS

1. Preheat the oven to 200°C, gas mark 6. Add the contents of the lamb kleftiko pack to an ovenproof dish (about 18cm x 25cm). Add the cherry tomato and basil sauce, cover tightly with foil and bake for 20 minutes.

2. Remove from the oven and discard the foil. Using two forks, shred the lamb off the bone. Discard the bone and mix the pulled lamb through the sauce.

3. Top with crumbled feta and pitta chips, then return to the oven for a further 20 minutes until the sauce is bubbling, the lamb is piping hot throughout and the feta is caramelised. Serve with a crunchy green salad, if liked.
