Chicken bake with tomatoes and courgettes

Ingredients

2 tbsp essential Waitrose olive oil

1 tbsp essential Waitrose balsamic vinegar

1 x essential Waitrose onion

800g pack essential Waitrose British chicken thighs

250g essential Waitrose cherry tomatoes

1 courgette, chopped
-
4 garlic cloves, squashed
-
2 tbsp chopped oregano
-
½ tsp chilli flakes
-
½ lemon, zest and juice
-
½ ciabatta, torn into chunks
Method

Preheat the oven to 220C, gas mark 7. Combine the oil and balsamic vinegar. Peel the onion and cut into 8 wedges. Put the onion and all the remaining ingredients in a baking dish,
drizzle over the oil and vinegar mix and season.

Roast for 35 minutes, until cooked through and the chicken is beginning to turn golden. Serve with a green salad.
