    Chicken bake with tomatoes and courgettes

    • 2 tbsp essential Waitrose olive oil
    • 1 tbsp essential Waitrose balsamic vinegar
    • 1 x essential Waitrose onion
    • 800g pack essential Waitrose British chicken thighs
    • 250g essential Waitrose cherry tomatoes
    • 1 courgette, chopped
    • 4 garlic cloves, squashed
    • 2 tbsp chopped oregano
    • ½ tsp chilli flakes
    • ½ lemon, zest and juice
    • ½ ciabatta, torn into chunks


    1. Preheat the oven to 220C, gas mark 7. Combine the oil and balsamic vinegar. Peel the onion and cut into 8 wedges. Put the onion and all the remaining ingredients in a baking dish, drizzle over the oil and vinegar mix and season.
    2. Roast for 35 minutes, until cooked through and the chicken is beginning to turn golden. Serve with a green salad.
