Ingredients

  • 6 Essential Tomatoes
  • 2 tbsp extra virgin olive oil
  • 50g Essential Pitted Black Olives, chopped
  • 90g pack wild rocket
  • 100g pack ciabatta croutons with black pepper & sea salt
  • 70g pack bresaola
  • 150g Essential Ricotta
  • ½ unwaxed lemon, zest and juice

Method

  1. Cut each tomato into 6 wedges. Tip into a large bowl and season with salt. Add 1 tbsp oil, the chopped olives, rocket and croutons, then toss together until evenly combined.

  2. Divide the salad among 4 plates, then top with the bresaola slices and dollops of ricotta. Sprinkle over the lemon zest and freshly ground black pepper. Drizzle with the lemon juice and remaining 1 tbsp olive oil to serve.
