Moroccan turkey couscous

Serves: 4
1 tbsp oil
500g pack essential Waitrose Diced British Turkey Breast Fillets
1 tbsp Belazu Tagine Paste
1 courgette, diced
25g toasted flaked almonds
100g dried apricots, halved
175g essential Waitrose Couscous
1. Heat the oil in a large frying pan and fry the turkey for 5 minutes. Add the paste then the courgette, almonds and apricots. Add 100ml of water, cover and cook for 3 minutes or until the turkey is cooked through with no pink meat.
2. Meanwhile, place the couscous in a bowl and pour over 200ml boiling water then cover and leave for 5 minutes. Fluff up with a fork, stir into the turkey and season to taste.
