Pear and cranberry sauce

A twist on the traditional relish, this sauce contains pear for a natural sweetness that mellows the cranberries’ inherent tartness.
Serves: 6-8
35g salted butter
4 pears, peeled, cored and diced
100g caster sugar
200ml dry cider
1 strip orange zest
¼ tsp ground allspice
250g fresh (or frozen) cranberries
1. Melt the butter in a pan, then add the pears and fry for 5 minutes before adding the sugar, cider, orange zest and allspice. Cook for 15-20 minutes until the pears have softened. Using a potato masher, roughly squash most of the pear, then add the cranberries and cook for a further 10-15 minutes, until the berries have softened and the sauce has thickened. Allow to cool before serving.
